Drive through the (very) small town of Neversink, New York, and an almost-hidden dirt road leads uphill to the charming Hemlock Neversink. Open year-round in the western Catskills, this charming property sits on 230 acres of meadows and wooded trails, with 33 guest rooms spread across the grounds. It sits somewhere between boutique hotel, wellness retreat, and adult summer camp— pulling the best elements from each.

This isn’t the nostalgic, plaid-blanket version of the Catskills. Hemlock belongs to a newer generation of upstate stays: design-conscious, culinary-minded, and wellness-focused. Its guests range from couples escaping the city and small groups celebrating birthdays or long weekends, to travelers who want to enjoy nature without forgoing cozy interiors or a good cocktail.

Design & Character

The aesthetic here lands somewhere between Scandinavian minimalism and a modern Hudson Valley farmhouse. Instead of leaning into heavy mountain-lodge vibes, the design keeps things clean with warm wood tones, neutral fabrics, and oversized windows that bring the outside in. Custom furniture sourced from Portugal adds polish while still being comfortable enough that guests can actually kick back.

The communal areas are easily one of the property’s strongest features. The main building acts as a hub throughout the day, with multiple places to settle in depending on mood. There are sofas by a fireplace, small café tables tucked beside windows, and quieter corners that feel made for reading or answering emails between activities. 

The Rooms

Guest rooms follow the same philosophy as the public spaces: simplicity executed well. Rather than packing in decorative elements, the focus is on comfort and materials. Beds are especially good, with plush mattresses and high-quality Bellino linens paired with down bedding. Many rooms include cozy seating areas, fireplaces, or outdoor patios overlooking the land, which quickly become favorite spots at sunrise or just before dinner. Accommodation options range from spacious suites and king rooms to smaller rooms designed with solo travelers in mind (though they can comfortably accommodate two). 

The Food & Drink

Food is a central part of the experience, and it shows. The restaurant leans heavily into seasonal sourcing, drawing from nearby farms and regional producers throughout the year. Menus shift frequently, reflecting what’s freshest rather than sticking to the same old dishes. Depending on the season, that might mean roasted root vegetables, house-made pastas, fresh fish, or slow-braised meats. There’s also a nice wine listing, with pairing options available.

The amenities are where Hemlock really separates itself from other Catskills stays. Nearly everything is included, and the programming changes daily depending on the season and weather. One afternoon might involve candle-making using dried flowers and essential oils, while another leans into abstract painting or oil pastel workshops inside the activity building. Movement classes and yoga take place in the studio, while wellness facilities include complimentary access to saunas, steam rooms, locker areas, relaxation spaces, sundecks, and a gym. The indoor pool and hot tub are a draw year-round, especially during Sip & Swim evenings when classic movies play poolside, and guests float or lounge with drinks in hand.

Outside, the 230-acre property becomes the main attraction. Private trails wind through woods and open fields for hiking, birdwatching, mountain biking, or snowshoeing, depending on the season. Tennis courts, fire pits, apple orchards, and stargazing decks encourage guests to spend time outdoors, while an athletic gear room stocked with binoculars, kites, and seasonal equipment makes spontaneous adventures easy. Plus, the property also has resident goats, which guests can visit at the barn.

Location & Neighborhood Recs

The western Catskills location has a noticeably different experience from busier upstate destinations. While towns closer to the Hudson River can feel crowded on weekends, this corner of New York is refreshingly low-key. Long drives are arguably one of the best activities here. Farmland, mountain views, and roadside farm stands make even short outings fun. Hiking opportunities can be found all throughout the region, while nearby small towns offer antique shops, cafés, and farmers' markets.
